Hello! Yesterday I went to Trader Joes and bought some really delicious stuff, in particular, two special cheeses. One is a Baked Lemon Ricotta Cheese, and the other is a triple cream Brie with Green Peppercorns. I could not wait to try these, as I love a good triple cream cheese, and I have always loved lemon ricotta pancakes.

When I got home I prepared two toasted slices of an Asiago Sourdough. For the sweet toast, the cashier told me it tastes like cheesecake, so I wanted to make a fun combination. I put raspberry jam on the bread and then sliced some of the cheese. It was incredibly light and creamy, and it really did taste like a fluffy lemon cheesecake. Once I tried it, I created a wonderful idea for a sandwich. Sourdough, with raspberry jam, sliced ham, arugula, caramelized onions, and that delicious baked lemon ricotta cheese. I will be making very soon!

For the savory cheese, I just simply sliced up the brie and put it on my toasted bread. It was very creamy, had a nice aged flavor, and the peppercorns provided a nice mild flavor too it. I had an idea to make something using jalapeños with that cheese, as I feel the balance of those flavors would go really well together. Overall it was delicious and would be great for cheese boards and little snacks throughout the day. I want to try broiling it next, seeing how it gets when its melty.
